Crisp Wild Rice Griddlecakes

cup wild rice |
| 2 |
cups water |
| 2 |
tablespoons cooking oil (not olive oil) |
| 1 |
jar Coonridge Organic Goat Cheese |
| 1 |
large egg |
| 1/3 |
cup chives |

| 1 |
Chop the chives |
| 2 |
Rinse the rice in cold water |

Bring 2 cups of water to a boil in a saucepan |

Stir in the rice |
| 5 |
Simmer uncovered until the rice is tender but the grains are not open (about 40 minutes) |

Drain the water and rinse the rice under cold water |

Put rice in a bowl |

Lightly beat the egg |
| 9 |
Stir the egg and chives with the rice |
| 10 |
Add salt and pepper to taste |
