Coonridge Corn Casserole

cup plain yogurt |

box corn muffin/bread mix |

large eggs |
| 1 |
16 oz can cream corn |
| 1 |
16 oz can regular corn |
| 1 |
jar Coonridge Southwestern Blend Organic Goat Cheese |

Preheat oven to 325 degrees Fahrenheit |

Lightly beat the eggs |
| 3 |
Mix by hand the yogurt, corn mix and eggs |

Drain the regular corn |
| 5 |
Add both cans of corn and the jar of goat cheese to mixture and mix thoroughly |
| 6 |
Bake until the middle becomes firm (about 45-60 minutes) |
