Baked Goat Cheese with Arugala Salad

A great appetizer or side salad.

""Baked Apricots with Goat Cheese & Pistachios

Scrumptious with a dessert wine

Ingredients:

Instructions:

12 ripe apricots
1 jar Coonridge Black Peppercorn Organic Goat Cheese
1/2 cup pistachios
1/4 cup pecans
1/4 cup honey
1 dash nutmeg
2 large lemons
1 large orange
2 Cut the apricots in half
3 Chop the pistachios and pecans (not finely) and finely toast
4 Juice the lemons and orange
5 Mix the juice
1 Preheat your oven to 400 degrees Fahrenheit
6 Place apricots pit side up in a pie plate
7 Pour juice on the apricots
8 Drizzle honey on the apricots
10 Sprinkle nuts and nutmeg on top of the apricots
11 Bake for 20-30 minutes according to your preference
